Keto Cheesy Apple and Sausage Pie

For the keto crust

  • cups almond flour
  • ¼ cup sugar replacement I used Swerve, used Swerve
  • ¼ teaspoon salt
  • 4 tablespoon butter melted

For the filling

  • 2 large apple peeled and sliced
  • ½ cup red onion chopped
  • 1 teaspoon sugar replacement
  • 4 tablespoons butter
  • 1 pound Italian sausage sweet
  • 1 teaspoon garlic powder
  • 1 cup Italian cheese mix shredded
  • 1 cup ricotta cheese
  • 2 egg slightly beaten

Instructions

For the keto crust

  1. In a medium bowl, whisk together almond flour, sweetener, and salt. Stir in melted butter until dough comes together.
  2. Turn out into a glass pie plate. Press firmly with fingers into bottom and up sides. Prick all over with a fork before baking.
  3. Preheat oven to 325F. Bake until edges are golden brown, about 20 minutes.

For the filling

  1. Melt butter in a large skillet over medium heat. Add apples, onions, and sweetener. Cook stirring occasionally, about 5 minutes. 
  2. Add in the garlic powder and transfer to a separate bowl.
  3. Add the sweet Italian sausage to the skillet. Cook until sausage is cooked through and browned. Remove from heat.
  4. In a medium sized bowl, mix together the cheeses and beaten eggs.
  5. Place the sausage on the bottom of the pre-baked keto crust. Add the cooked apple and onion mixture over the sausage.
  6. Pour the cheese egg mixture on top and spread it so it evenly covers the pie.
  7. Bake at 350F for 30-35 minutes, until a knife inserted in the center comes out clean.
