Keto Chia Seed Pudding

Keto Chia Seed Pudding is a chilled, creamy dessert made by soaking chia seeds in coconut milk combined with a sugar-free sweetener and vanilla. The pudding thickens as the seeds absorb the liquid, resulting in a smooth yet slightly textured treat. This recipe allows for customization with various toppings to suit your preference.

Description

This Keto Chia Seed Pudding highlights the use of coconut milk and chia seeds as its main ingredients, providing a plant-based base that thickens naturally overnight. The addition of vanilla extract gives a subtle aroma, while optional pinch of salt enhances the flavors. Sweetener is added to taste, allowing dietary customization.

The preparation involves mixing the ingredients and allowing the mixture to sit and thicken first at room temperature to avoid clumps, then refrigerating to develop its pudding-like consistency. The texture is creamy with a slight gel from the hydrated chia seeds.

It can be served as a breakfast, snack, or dessert with favorite toppings to add texture and flavor variety. Hands-on time is minimal, with most of the work done by soaking and chilling.
