Keto Chicken Parmesan

This low carb chicken parmesan recipe is similar to the traditional recipe, except this dish is gluten and sugar-free! The gooey cheese and crunchy coating won't disappoint even the most discriminating palate!

Ingredients

  • 3-4 chicken breast boneless
  • 2 egg beaten
  • 2 Tbsp Italian seasoning divided
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 cup Parmesan Cheese
  • ¾ cup marinara sauce sugar free
  • 1 cup pork rinds crushed
  • 8 oz fresh mozzarella sliced
  • basil fresh, for garnish

Instructions

  1. Heat a non-stick skillet or cast iron over medium heat and preheat oven to 375 degrees.
  2. In a medium bowl mix together Parmesan cheese, salt, pepper, garlic powder, and 1 tablespoon of Italian seasoning.
  3. In a second bowl beat 2 eggs, and in a third bowl mix the remaining Italian seasoning with the crushed pork rinds.
  4. Coat the chicken one by one with the parmesan cheese, egg and pork rinds.
  5. Add a little olive oil or cooking spray to the pan and slowly add the chicken to the pan. 
  6. Cook for about 3 minutes on each side to allow the crust to stick.
  7. Remove from pan and transfer to a baking dish.
  8. Spoon about 2 tablespoons of marinara sauce onto each piece of chicken. Then top each with a slice of mozzarella.
  9. Bake for 15-20 minutes or until the chicken is up to temperature.
  10. Serve with some fresh basil and enjoy.
