Keto Chocolate Zucchini Muffins

If you're looking for a nice change from traditional breakfast, these muffins are just the ticket!  Zucchini makes them super healthy and the chocolate makes them decadent!

Ingredients

  • 1 ¾ cups almond flour Super Fine
  • ¼ cup oat fiber see notes
  • ¼ cup cocoa powder unsweetened
  • ¾ cup zucchini water squeezed out, grated
  • 2 egg
  • cup sour cream
  • cup Swerve Confectioners Sugar
  • 2 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon coffee extract
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions

  1. Preheat oven to 350F. Add the flour, baking powder, oat fiber, cinnamon, cocoa powder and salt to a bowl and whisk together, then set aside.
  2. In a separate bowl, add of the wet ingredients (except the zucchini) mix using a hand mixer or whisk.  Add in the zucchini and mix by hand.
  3. Add the dry ingredients into the wet, in two additions and mix by hand just until combined.
  4. Scoop into silicone cupcake liners or paper liners.  Bake for 18-20 minutes or until a toothpick, when inserted, comes out clean.  Allow to cool before serving.
  5. Optional- You can add chopped walnuts or sugar-free chocolate chips over the top.

Notes

  • Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet. It helps give a more traditional texture and that's why I use it so often. Check out all the Keto Oat Fiber Recipes you can make!
  • To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
