Keto Clam Chowder - New England Style Low Carb Recipe

Creamy low carb clam chowder New England style. Hearty and delicious chowder made with cauliflower florets. The texture is similar to potatoes and the soup base is just like the traditional clam chowder. The whole family will enjoy this recipe.

Ingredients

  • 5 lices Bacon diced and divided
  • 1 onion chopped, small
  • 3 celery diced, stalks
  • 2 carrot diced
  • 1 potato peeled and diced - optional, medium
  • 1 cauliflower 5 cups florets, medium head
  • 1 teaspoon thyme
  • 1/4 cup all-purpose flour
  • 2 bay leaf whole
  • 1 8 ounce clam juice bottle
  • 4 clams chopped, canned
  • 1 baby clams canned
  • 1 quart half and half
  • salt to taste
  • black pepper to taste
  • parsley fresh leaves, for garnish

Instructions

  1. In a large stock pan or Dutch oven cooked bacon over medium-high heat until crispy. Remove cooked bacon from the pan and place on a plate lined with a paper towel. Reserve some to top on the chowder before serving.
  2. Lower heat to medium and add diced onion, celery, and carrots to pot and saute until onion is translucent and vegetables begin to soften.
  3. Add the cauliflower florets and diced potato (is using). Fold into the vegetables. Sprinkle flour (if using) over the vegetables with the thyme. Stir for 2-3 minutes.
  4. Add the clam juice, half and half, bay leaves and cooked bacon to the pot. Reduce heat to simmer and cook until cauliflower is tender, 5-10 minutes.
  5. Fold in clams. Stir to warm, season with salt and black pepper.
  6. Serve cooked chowder topped with reserved bacon and chopped parsley.

Notes

  • Reserve some cooked bacon to add to the top of each serving.
