Keto Coleslaw Recipe

This keto coleslaw with Greek yogurt is creamy, tangy and crisp! Delicious and healthy, this coleslaw recipe is made without sugar, it's low-calorie and low-carb!

Ingredients

  • ¾ cup Greek yogurt full-fat is best
  • 2 tablespoons apple cider vinegar or white wine vinegar
  • 2 tablespoons lemon juice fresh
  • ½ teaspoon salt adjust to taste, fine
  • ¼ to ½ to ½ teaspoon white pepper or black, adjust to taste
  • ½ teaspoon celery seed or 1 teaspoon whole celery seeds, ground
  • ½ teaspoon garlic powder
  • 2 to 3 to 3 tablespoons powdered sweetener (Optional, for sweet coleslaw) or add drops of stevia / monk fruit, to taste
  • 16 ounces coleslaw mix

Instructions

  1. Mix well 3/4 cup Greek yogurt, 2 tablespoons apple cider vinegar, 2 tablespoons fresh lemon juice, 1/2 teaspoon fine salt, 1/4 to 1/2 teaspoon white pepper, 1/2 teaspoon ground celery seed, 1/2 teaspoon garlic powder and (optionally, if you prefer sweet coleslaw) 2 to 3 tablespoons powdered sweetener. Mix until smooth and creamy.
  2. Place 16 ounces coleslaw mix in a large bowl. Pour the dressing over the mix and toss it to dress all the cabbage evenly.
  3. For best taste and texture, refrigerate for at least 30 minutes before serving for the flavors to blend and the cabbage to soften. Serve chilled.

Notes

  • Plain full-fat Greek yogurt makes a much creamier coleslaw dressing (than fat-free or low-fat yogurt) and still very low-calorie dressing when compared with a typical mayo dressing.
  • You can substitute the pre-packaged coleslaw mix with 5 to 6 cups of finely shredded white cabbage (about 1 small head) and 1 cup of shredded carrot (about one medium carrot).
