Description
This meatloaf recipe uses 85% lean ground beef mixed with sautéed onions and garlic for added moisture and flavor. Almond flour replaces breadcrumbs to keep it keto-friendly, paired with Parmesan cheese for richness. The seasoning includes dried thyme, Worcestershire sauce, salt, and pepper, combining to create a balanced, savory profile. Sugar-free ketchup and BBQ sauce add tang and subtle sweetness without carbohydrates.
The mixture is formed into a loaf, placed on foil in a slow cooker insert to prevent sticking, and cooked on low or high until the internal temperature reaches 160°F, ensuring safe and thorough cooking. The slow cooker method evenly cooks the meatloaf while preserving juiciness, avoiding dryness often found in oven-baked versions.

Ingredients
- 2 pounds ground beef I use 85%
- 1 yellow onion diced, small
- ⅔ cup Parmesan Cheese grated
- ½ cup almond flour
- ½ cup ketchup no sugar added
- 4 cloves garlic minced
- 2 egg beaten, whole
- 2 tablespoons BBQ sauce sugar-free
- 1 tablespoon tomato paste
- 1 tablespoon brown monk fruit sweetener or allulose
- 1 tablespoon parsley fresh
- 1 tablespoon olive oil
- 2 teaspoons Worcestershire sauce
- 1 teaspoon thyme dried
- 1 teaspoon salt
- ¼ teaspoon black pepper ground
Instructions
- Heat a skillet to medium and add in the olive oil, onions, ground black pepper and half the salt. Sauté for a few minutes until slightly caramelized.
- Add in the garlic and sauté for another 15 seconds, then remove from the heat and allow to cool, while you mix up the meatloaf.
- In a large mixing bowl, add in the eggs, parmesan cheese, almond flour, BBQ sauce, tomato paste, parsley, dried thyme, Worcestershire sauce and remaining salt. Once the sautéed onions and garlic have cooled, add them in and mix until well combined.
- Add in the ground beef and mix, just until combined. Do not over mix or the meatloaf could become tough.
- Add a couple of sheets of aluminum foil to line the insert of your slow cooker. Spray the bottom and sides with nonstick spray or brush with olive oil. Form ground beef mixture into a meatloaf shape and place it in your foil-lined insert.
- Cook on high 2 ½- 3 hours or low for 5-6 hours or until the internal temperature reaches 160°F when checked with a meat thermometer. Cooking times can vary based on how you shape your loaf. A longer thinner loaf will cook slightly faster than a smaller, more compact loaf.
- Preheat oven to 450°F.
- Carefully remove the meatloaf in the foil from the slow cooker insert, remove any excess fat and place in a baking pan with the foil. Add the ketchup and brown sweetener in a small bowl and mix until well combined. Spread the mixture over the top and sides, then bake in the oven for 10-15 minutes or until the glaze is slightly caramelized.
- Remove from the oven, slice and serve.
