Keto Double Chocolate Muffins

Ingredients

  • 1 ½ cups almond flour Super Fine
  • cup cocoa powder unsweetened
  • ¼ cup oat fiber see notes
  • 2 egg whole
  • ½ cup butter melted
  • ½ cup heavy cream
  • cup sour cream
  • ½ cup Swerve confectioners sweetener 2 tablespoons
  • ½ cup sugar-free chocolate chips
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • Pinch salt

Instructions

  1. Preheat oven to 350F. Add the almond flour, cocoa powder, oat fiber, baking powder and salt to a large mixing bowl and whisk until well combined.
  2. In a separate bowl, mix together the eggs, butter, sour cream, heavy cream, vanilla extract and Swerve. Pour the wet ingredients into the dry and mix just until combined. Add in the chocolate chips and continue mixing.
  3. Using an ice cream scoop or two spoons, scoop the batter into a muffin pan lined with silicone liners or sprayed with nonstick spray. You can add a few chocolate chips over the top if you’d like, then bake for 20-23 minutes or until a toothpick when inserted, comes out clean.

Notes

  • Oat Fiber is made from grinding the outer husks of oats. How healthy is oat fiber? It's pure insoluble fiber, which doesn't dissolve in water and isn't broken down in the digestive tract, so it has zero net carbs and is perfect for a Keto Diet.   • To get the best results, it's best to use oat fiber if you can. If you're unable to find it, try a combination of psyllium husk powder and coconut flour. Since both are very absorbent, you might have to add more liquid.
