Description

The Keto-Friendly Chicken Divan Casserole starts by boiling boneless skinless chicken breasts until cooked, then cubing them into half-inch pieces. These are mixed with shredded cheddar cheese, mayonnaise, chopped onion, and thawed frozen broccoli to form the filling. The mixture is spread in a glass baking dish, topped with additional cheddar cheese, and baked at 350°F until the cheese topping bubbles and browns.

This casserole offers a creamy texture from the mayonnaise and melted cheese, combined with the mild sweetness of broccoli and tender chicken chunks. Letting the casserole stand after baking helps the cheese congeal and the flavors meld for easier serving.

  • 3 Pounds chicken breast boneless skinless
  • 3 Pounds cheddar cheese shredded sharp
  • 2 Cups mayonnaise
  • 2 pounds broccoli frozen
  • 1 cup onion chopped

Instructions

  1. Boil the chicken breasts for 20 minutes and then cut into 1/2 inch cubes. In a large bowl mix all of the ingredients, except for 1 pound of Shredded Cheddar Cheese. Place the mixture in a large glass baking dish, and sprinkle the remaining pound of Shredded Cheddar Cheese on the top. 
  2. Preheat oven to 350 degrees F. Bake for 60 minutes or until the topping on the cheese bubbles. Remove from oven and let stand for 15 minutes to allow the cheese to congeal before serving.

Notes

  • Use bone-in split chicken breasts poached 20-25 minutes for more flavor and cost savings; remove skin and bones before cubing.
  • A stand mixer with paddle attachment can quickly shred cooked chicken if preferred.
  • Be sure to thaw and drain frozen broccoli well to prevent a watery casserole.
