Keto Meatloaf

Keto Meatloaf blends ground beef with pork rind crumbs and Parmesan cheese as a low-carb binder, combined with chopped onion, celery, and garlic for savory flavors. Italian seasoning and dried parsley add herbaceous notes. The meatloaf is baked until set, then topped with tomato paste and fresh parsley, resulting in a hearty, flavorful dish with a moist texture.

Description

This Keto Meatloaf recipe uses two pounds of ground beef as a base, mixed with finely chopped onion, celery stalks, and minced garlic that lend aromatic and textural complexity. Instead of traditional breadcrumbs, crumbed pork rinds and Parmesan cheese serve as binders that keep carbs low while maintaining structure and adding umami.

The mixture is seasoned with Italian seasoning and dried parsley, delivering classic herb flavors associated with meatloaf. An egg is added to help bind the ingredients together firmly. After shaping in a shallow baking dish, the meatloaf is baked at 350°F for an hour, allowing the beef to cook through and flavors to meld.

Once baked, the meatloaf is topped with tomato paste to add acidity and moisture while garnishing with fresh parsley for a burst of green flavor. This preparation balances hearty protein with aromatic vegetables and herbs, producing a dense but moist meatloaf suitable for ketogenic diets or those minimizing carbohydrates.
