Ingredients

  • 1 egg large
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon thyme dried
  • 2 tablespoons garlic minced
  • 2 pounds ground beef 90% lean, 10% fat, lean
  • 1/2 cup almond flour blanched, finely ground
  • 3/4 cup Parmesan Cheese grated
  • 1/4 cup ketchup unsweetened or sugar-free
  • 2 tablespoons parsley optional, for garnish, finely chopped

Instructions

  1. Preheat oven to 350°F and line a rimmed sheet pan with foil or grease a loaf pan with nonstick cooking spray.
  2. In a large mixing bowl, whisk together the egg, salt, pepper, garlic powder, onion powder, thyme, and minced garlic.
  3. Add the ground beef, almond flour, and Parmesan cheese to the bowl. Mix until just combined.
  4. Shape the meatloaf mixture into a traditional loaf shape on the prepared baking sheet or press it into the prepared loaf pan.
  5. Brush the top of the loaf with the ketchup. Bake for about 1 hour or until the center reaches 160°F.
  6. Rest the meatloaf for about 15 minutes before slicing and serving. Garnish with parsley if desired.
