Keto Meatloaf with Pork Rinds

Keto Meatloaf with Pork Rinds combines ground beef and diced onions with crushed pork rinds as a low-carb binder. Flavored with Worcestershire sauce, garlic powder, salt, and topped with reduced-sugar ketchup, this meatloaf bakes until firm and moist. It's designed to provide a satisfying meat dish suitable for ketogenic diets without traditional bread crumbs.

Description

This Keto Meatloaf recipe uses 80/20 ground beef mixed with diced onions, crushed pork rinds, egg, Worcestershire sauce, garlic powder, and salt. Pork rinds serve as a crunchy, carb-free substitute for breadcrumbs to help bind the meat. The mixture is pressed into a lined loaf pan and initially baked at 350°F for 30 minutes.

After the initial bake, reduced-sugar ketchup is spread on top and the meatloaf continues baking for another 25 to 35 minutes, forming a glaze. Resting for 15 minutes after baking allows juices to redistribute, resulting in a tender and flavorful meatloaf with a slightly crisp ketchup topping.

This dish offers a protein-rich, low-carb main course for those following ketogenic or low-carb diets, while still maintaining classic meatloaf flavors and textures.

Substituting onion powder for fresh onion is an option for convenience, as noted in the recipe.

  • You can replace diced onion with 1 teaspoon of onion powder if preferred.
  • Letting the meatloaf rest after baking helps maintain moisture when slicing.
