Description

This bread combines whole eggs beaten with salt and coated thoroughly with an equal mix of various seeds and nuts, including flax, pumpkin, sunflower, sesame seeds, almonds, and walnuts. The mixture is poured into a parchment-lined loaf pan and baked at 320°F (160°C) for one hour, resulting in a compact, firm loaf with a rich, nutty flavor.

The bread slices thinly once cooled, offering a dense texture with crunch from the nuts and seeds. It is suitable for those following a keto or low-carb eating style requiring bread alternatives without grains or flour.

Variations include adjusting the ratio of flaxseeds to other seeds and nuts, as well as making nut-free versions by using only seeds. A sweeter version can be made by adding dried fruit or chocolate chips as desired.

  • 6 egg large
  • 1 teaspoon salt
  • ¾ cups flax seeds or 1 cup flaxmeal (see Notes)
  • ¾ cups pumpkin seeds (pepitas)
  • ¾ cups sunflower seeds
  • ¾ cups sesame seeds (I used half white and half black)
  • ¾ cups almonds
  • 1 cup walnuts

Instructions

  1. Preheat oven to 160 °C (320 °F)
  2. In a large bowl, mix the 6 large eggs and 1 teaspoon salt well with a big spoon or spatula. Add all the 3/4 cups flax seeds, 3/4 cups pumpkin seeds, 3/4 cups sunflower seeds, 3/4 cups sesame seeds , 3/4 cups almonds and 1 cup walnuts and mix thoroughly until everything is equally coated in egg and there are no dry spots.
  3. Let mixture sit while buttering or lining a large (10-inch) loaf pan with parchment paper
  4. Mix the nut and seed batter again, and pour it into the loaf pan, flattening the top with an spatula
  5. Bake the Nordic bread for one hour. Wait until it cools down before cutting into thin slices - use a sharp knife.

Notes

  • Maintain at least 100 grams of flaxseeds or flaxseed meal in the recipe for structure.
  • Use about twice as many seeds as nuts by weight for best texture and consistency.
  • For nut-free bread, substitute nuts entirely with a combination of seeds.
  • You can add dried fruits or chocolate chips to make a sweet variation of this bread.
