Keto Reuben Sliders

These delicious Keto Reuben Sliders feature tender juicy corned beef nestled in pillowy soft Keto rolls.

Ingredients

  • 1 batch Keto Dinner Rolls
  • 1 cup Sauerkraut well drained
  • ¾ pound corned beef sliced thin
  • 12 lices Swiss cheese
  • ½ cup Keto Thousand Island Dressing
  • 2 tablespoons butter melted
  • 1 tablespoon everything Bagel seasoning

Instructions

  1. Prepare the Keto Dinner Rolls and allow them to cool while you prepare all the ingredients.
  2. Remove the buns in one piece, which should be easy since they are the “pull apart” type.
  3. Place them on a cutting board and using a bread knife, slice all the buns in half, trying to keep them together as one solid piece.
  4. Take the bottom buns and place them in a half sheet pan that’s been sprayed with nonstick spray or brushed with olive oil.
  5. Preheat oven to 350°F. Place half the cheese over the bottom buns. Next, add the corned beef in bunches, rather than laying it completely flat.
  6. Then add the (well drained) sauerkraut and thousand island dressing. Top with the remaining cheese.
  7. Lastly, add the top buns, brush with the melted butter and a sprinkling of Everything Bagel Seasoning.
  8. Lightly tent the casserole with aluminum foil and bake for 20 minutes or until the cheese has melted and the buns are golden.
  9. Allow them to cool slightly before cutting them into individual sliders.

Notes

  • If you already store bought Keto buns on hand you can use those instead of making them from scratch.  Just be sure to adjust your macros accordingly.
