Roast Beef and Asparagus Roll Ups are a 4 ingredient, easy low carb lunch, dinner, or snack idea, that can even be served as a keto appetizer at parties!

Ingredients

  • 1 pound roast beef thinly sliced, deli
  • 1 pound asparagus approximately 36 thin spears
  • 8 ounces cream cheese
  • 1 tablespoon horseradish

Instructions

  1. Steam the asparagus so it is tender but crisp, approximately 2-3 minutes depending on thickness. When done run under cold water, pat dry, and set aside.
  2. In a bowl stir together the cream cheese and horseradish until it is thoroughly combined.
  3. Spread approximately 1 tablespoon of cream cheese on each slice of roast beef, add three spears of asparagus and roll the roast beef up.
  4. Refrigerate in an airtight container until ready to serve.

Notes

  • Note: You can cook your asparagus to whatever level of tenderness you prefer. I like mine with just a little crispness to them so they aren't limp when they hang out of the roast beef. If you prefer less crunch it's not a problem!
