Keto Sausage Gravy Recipe

Keto Sausage Gravy is a low-carb sauce made by cooking sausage with butter, then simmering with heavy cream, water, and arrowroot powder to thicken. It’s served over low-carb cheddar biscuits and finished with butter for richness. The gravy is hearty with a creamy texture and rich flavor driven by the combination of sausage and cream.

Description

This Keto Sausage Gravy begins with cooking sausage in butter until browned and broken into preferred-sized pieces. Excess fat is drained if needed before adding heavy cream and water to create a sauce base. Arrowroot powder is mixed into a small amount of sauce off heat to prevent lumps, then whisked back in to thicken the gravy over medium-high heat. Final butter addition enriches the texture and flavor.

The dish pairs with low-carb cheddar biscuits that are warmed in the oven with gravy poured over them, allowing the biscuits to absorb some of the sauce. The gravy is creamy and dense, designed to complement the savory sausage without relying on flour-based thickeners, aligning with ketogenic dietary goals.

The recipe notes using a mix of sweet and hot sausage for balanced spice but can be adjusted per taste preferences. Serving immediately after heating ensures the best texture. The approach allows control over sausage piece size in the gravy for texture variation.

Ingredients

Servings
  • 1 pound sausage
  • 1 1/2 cups heavy cream
  • 1 cup water
  • 1 tablespoon arrowroot powder
  • 4 tablespoons butter

Instructions

  1. Make low carb cheddar biscuits and set aside.
  2. In a medium saucepan cook sausage in two tablespoons of butter until the meat is no longer pink. Break up the sausage into the size of pieces you prefer while cooking. Once meat is cooked, drain fat if there is more that a couple of tablespoons left in the pan.
  3. Add cream and water and simmer for about 12 minutes. Remove one tablespoon of the sauce and place it in a small bowl to cool. Once cool, whisk in the arrowroot, then return to the skillet whisking in the sausage mix. Bring to medium-high heat and once the sauce thickens and begins to bubble, remove from heat. Add remaining two tablespoons of butter and stir until incorporated in the sauce.
  4. Place the biscuits in a baking pan. Pour sausage gravy over the biscuits. Place in the oven at 350 degrees and cook for 10 minutes or until the biscuits are heated.
  5. Serve right away.

Notes

  • Mix sweet and hot sausage to balance spice levels as preferred.
  • Drain excess fat to avoid overly greasy gravy.
  • Add arrowroot powder into cooled sauce to prevent lumps before reheating.
  • Serve the gravy hot over low-carb cheddar biscuits for best texture.
