Keto Sloppy Joes
Description
This recipe for Keto Sloppy Joes uses ground beef sautéed with chopped onions and garlic, seasoned simply with salt and pepper. The mixture is cooked just until the beef loses its raw appearance, ensuring it remains juicy rather than dry. The sauce incorporates unsweetened ketchup and balsamic vinegar, contributing tang and sweetness, with an optional low-carb sweetener to replace sugar.
The dish simmers briefly to meld flavors and thicken the sauce. The final texture is moist with tender meat pieces coated in a flavorful sauce, suitable for serving on low-carb bread options or alongside vegetables.
The recipe notes point out that leftovers develop flavor when refrigerated and can be stored in the fridge for up to four days or frozen in portions for longer storage. Reheating slowly helps retain moisture and texture.
Cook beef until no longer raw but still slightly pink to avoid dryness as it will continue cooking.Leftovers improve in flavor after refrigeration and can be stored up to 4 days in fridge.Freeze leftovers in portions; thaw overnight or reheat gently to retain moisture.
Ingredients
- 1 tablespoon butter
- 1 pound ground beef 85/15, lean
- 1 small onion chopped; 4 ounces
- 1 teaspoon kosher salt or ½ teaspoon of any other salt, including Morton kosher salt, Diamond Crystal brand
- ¼ teaspoon black pepper
- 1 tablespoon garlic minced, fresh
- ½ cup ketchup unsweetened
- ½ tablespoon balsamic vinegar
- ¼ teaspoon stevia glycerite optional, equals 1 tablespoon of sugar
Instructions
- Heat the butter in a large skillet over medium-high heat. When the foaming subsides, add the beef, onions, salt, and pepper.
- Cook, breaking up the beef into small pieces, until the beef is no longer raw and the onions are soft, about 5 minutes. There's no need to drain the mixture, but feel free to drain it if you wish.
- Reduce the heat to medium and add the garlic. Cook, stirring, for 1 more minute.
- Stir in the ketchup, balsamic vinegar, and sweetener.
- Lower the heat to medium-low and simmer, uncovered, stirring often, for 5 more minutes. Serve immediately.
Notes
- Do not fully overcook ground beef initially to keep the mixture juicy; slight pink is acceptable before simmering.
- Store leftovers in airtight containers up to 4 days refrigerated; flavor improves after resting.
- Portion and freeze leftover sloppy joe mixture for longer storage and convenient reheating.
