Keto White Chicken Chili

Ingredients

  • 4 cups chicken 1 pound cooked, shredded
  • 3 cups chicken stock
  • 1 poblano pepper diced (⅔ cup, medium
  • 1 jalapeno pepper seeded, ribs removed and minced, medium
  • ½ cup yellow onion diced
  • 1 .5 ounce green chiles in can, canned, chopped
  • 8 ounces cream cheese softened
  • ½ cup baby corn drained, rinsed and chopped, canned
  • 1 ½ cups pepper jack cheese shredded
  • 1 garlic minced, large clove
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 tablespoon cumin ground
  • 2 teaspoons chili powder
  • ½ teaspoon oregano dried
  • ¼ - ½ teaspoon cayenne pepper
  • ¼ cup cilantro chopped, fresh
  • lime juice and zest of ½ lime
  • ½ teaspoon salt

Instructions

  1. Heat a large pot or Dutch oven to medium and add in the butter and olive oil. Add in the onion, poblano, jalapeño peppers and salt, then sauté for a few minutes or until the onions are translucent.
  2. Add in the garlic and sauté for about 10 seconds. Then add in the cumin, cayenne pepper and chili powder, and stir for about a minute, to toast the spices. Pour in the green chilis, chicken stock, oregano, baby corn, cream cheese and chicken.
  3. Simmer uncovered for 20 minutes, stirring occasionally. Then add in the pepper jack cheese, lime and cilantro. Continue cooking for 5 more minutes or until thickened to your liking.
  4. Serve with your choice of garnishes: shredded cheese, sour cream, cilantro and/or sliced avocado over the top.

Notes

  • Baby corn is prematurely harvested before it's pollinated, and doesn't have nearly as many carbs or sugar as adult corn and has a lot more fiber! Baby corn has only 3 net carbs for the ½ cup used in this entire recipe. You can certainly omit if you'd like.
  • This chili isn't very spicy, so it's family friendly. If you'd like to add more heat, you can use ½-1 teaspoon of cayenne pepper or more jalapeño pepper.
  • If you can't find pepper jack cheese, you can use Monterey Jack or shredded cheddar instead.
  • Mascarpone cheese can be substituted for the cream cheese if you're looking to lower the carbs a little.
