Keto Zucchini Fritters

Keto Zucchini Fritters with a homemade dipping sauce are a super tasty and low carb way to put all that delicious summer zucchini to use.

Ingredients

For the Fritters

  • 3 zucchini grated (about 4 cups)
  • ½ cup almond flour
  • ½ cup mozzarella cheese shredded
  • ½ cup Parmesan Cheese grated
  • 2 cloves garlic minced
  • 2 egg beaten, whole
  • 1 tablespoon chives chopped
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 teaspoons ranch seasoning homemade
  • 1 teaspoon salt
  • ¼ teaspoon black pepper ground

For the Dipping Sauce

  • ½ cup sour cream
  • lemon zest and juice of ½ lemon
  • 1 teaspoon ranch seasoning homemade
  • ½ clove garlic grated

Instructions

To Make the Dipping Sauce

  1. Add all the sauce ingredients to a mixing bowl.
  2. Whisk them together until well combined. Set aside at room temperature, so the flavors can meld while you prepare the zucchini.

To Make the Zucchini Fritters

  1. Wash and grate the zucchini, then add to a colander over a large mixing bowl with the salt. Allow to sit for 15 minutes. then using a cheesecloth or clean lint-free kitchen towel, squeeze out all the liquid. It’s important to get them as dry as possible.
  2. Add in the eggs, almond flour, ranch seasoning, pepper, garlic, chives and cheeses.
  3. Mix to combine, then form small patties a few inches in diameter. I used a heaping cookie scoop full, so they were uniform in size.
  4. Heat a large nonstick skillet to medium and add in the olive oil and butter. Fry the patties for about 5 minutes on each side, or until they are golden and cooked through.
  5. Drain on paper towels, sprinkle with a little salt and serve with a dollop of the dipping sauce on the side.

Notes

  • Makes 12 fritters, serving size 2 fritters
  • If you don't have sour cream, you can use a low carb Greek yogurt.
  • If you don't have chives, you can use green onion instead.
  • If you don't make your own ranch seasoning, you can use the store-bought packet, just be sure to use a little less, since it's saltier.
