Keto Zuppa Toscana Soup

Keto Zuppa Toscana Soup blends Italian sausage and bacon with cauliflower and spinach in a rich beef broth base enriched by heavy cream. The hearty mix of meats and vegetables creates a creamy soup with savory depth, suitable as a low-carb meal. Seasonings like garlic, onion, and optional red pepper flakes add layers of flavor, while shredded Parmesan adds a finishing touch.

Description

This Keto Zuppa Toscana begins by browning mild Italian sausage and thick-cut bacon pieces together to build a savory foundation. Diced onions, minced garlic, and cauliflower florets are then cooked in beef bone broth until the cauliflower softens. Heavy whipping cream and fresh spinach (or kale) are stirred in near the end to create a creamy consistency and add green freshness.

The soup offers a balance of meaty richness from the sausage and bacon with the subtle sweetness and texture of the cauliflower and leafy greens. Optional salt, black pepper, and crushed red pepper flakes allow customization of seasoning and heat. A sprinkle of Parmesan from the top adds an umami finish.

This soup is well suited for those following a ketogenic or low-carb diet due to the absence of starchy vegetables or pasta. It can be served as a filling main course, offering warmth and richness especially on cooler days.

The recipe notes that swapping cauliflower for turnips is possible, but because of the cream, it does not freeze well.

Ingredients

Servings
  • 1 lb Italian sausage mild
  • 4 lices Bacon thick-cut
  • 32 oz beef bone broth or beef broth
  • 1 onion diced, small
  • 3 cloves garlic minced, fresh
  • 1 head cauliflower diced, fresh
  • ½ cup heavy whipping cream
  • 2 cups spinach 5 oz package, or kale, fresh
  • salt optional
  • black pepper optional
  • red pepper flakes optional, crushed
  • Parmesan Cheese optional, shredded, for garnish

Instructions

  1. Using a large soup pot (like this dutch oven), brown your sausage and bacon together. Cut your bacon into bite sized pieces to make it easier to cook.
  2. Once your meat is cooked, add in beef bone broth, onions, garlic, and cauliflower. Cover and cook on medium heat for about 15 minutes, until the cauliflower is tender.
  3. Once the cauliflower is softened, add in heavy cream and spinach (or kale). Cook for about 5 minutes, until spinach (or kale) is soft.
  4. Serve with a spinkle of parmesan cheese and a pinch of salt, pepper, and/or crushed red pepper flakes. ENJOY!

Notes

  • Cauliflower can be substituted with turnips if preferred.
  • This creamy soup does not freeze well due to the heavy cream content.
