Description
This Keto Zuppa Toscana begins by browning mild Italian sausage and thick-cut bacon pieces together to build a savory foundation. Diced onions, minced garlic, and cauliflower florets are then cooked in beef bone broth until the cauliflower softens. Heavy whipping cream and fresh spinach (or kale) are stirred in near the end to create a creamy consistency and add green freshness.

Ingredients
- 1 lb Italian sausage mild
- 4 lices Bacon thick-cut
- 32 oz beef bone broth or beef broth
- 1 onion diced, small
- 3 cloves garlic minced, fresh
- 1 head cauliflower diced, fresh
- ½ cup heavy whipping cream
- 2 cups spinach 5 oz package, or kale, fresh
- salt optional
- black pepper optional
- red pepper flakes optional, crushed
- Parmesan Cheese optional, shredded, for garnish
Instructions
- Using a large soup pot (like this dutch oven), brown your sausage and bacon together. Cut your bacon into bite sized pieces to make it easier to cook.
- Once your meat is cooked, add in beef bone broth, onions, garlic, and cauliflower. Cover and cook on medium heat for about 15 minutes, until the cauliflower is tender.
- Once the cauliflower is softened, add in heavy cream and spinach (or kale). Cook for about 5 minutes, until spinach (or kale) is soft.
- Serve with a spinkle of parmesan cheese and a pinch of salt, pepper, and/or crushed red pepper flakes. ENJOY!
Notes
- Cauliflower can be substituted with turnips if preferred.
- This creamy soup does not freeze well due to the heavy cream content.
