Key Lime Pie Pancakes

Key Lime Pie Pancakes combine almond milk, Greek yogurt, and fresh lime juice with all-purpose flour and crushed graham crackers for a batter that cooks into fluffy, tangy breakfast cakes. The pancakes feature lime zest for brightness and are topped with lime-infused whipped cream to echo the pie’s flavors. The texture balances lightness with a slight crunch from graham crackers, making them a unique twist on traditional pancakes.

Description

These pancakes start with a wet mixture of almond milk, Greek yogurt, and fresh lime juice that thickens before combining with a dry mix of all-purpose flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt. Melted coconut oil and eggs are whisked in for moisture and structure. Lime zest is added to the batter to give a citrus aroma throughout.

The batter is cooked on a hot, lightly greased griddle or skillet until bubbles form and pop on the surface, then flipped to brown both sides evenly. This method produces pancakes that are tender inside with small air pockets and a slight crunch from the graham cracker crumbs.

Whipped topping is made by mixing heavy cream, powdered sugar, vanilla extract, and lime zest to provide a creamy, sweet-tart finish reminiscent of key lime pie. These pancakes can be served with pure maple syrup or enjoyed on their own for breakfast or brunch with a touch of indulgence.

Using two eggs results in fluffier pancakes, but the recipe works with one egg as well. For best results, have two limes on hand to provide enough zest and juice for the batter, topping, and garnish. The recipe notes specify measuring graham crackers by count and size for accurate crumb volume.

Ingredients

Servings
  • 1 cup almond milk unsweetened
  • 7 oz yogurt plain, Greek
  • 2 TBSP lime juice fresh
  • 1 + ¼ cups all-purpose flour
  • 5 graham crackers (see below)
  • 2 TBSP sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 3 TBSP coconut oil (melted + cooled slightly)
  • 2 egg
  • lime zest of 1

WHIPPED TOPPING:

  • ½ cup heavy whipping cream
  • ¼ cup powdered sugar
  • tsp vanilla extract pure
  • lime zest to taste

Instructions

  1. In a medium-large bowl, whisk together almond milk, Greek yogurt, and lime juice.
  2. Allow mixture to sit and thicken.
  3. Crush grahams.
  4. In a separate bowl, combine flour, finely crushed graham crackers, sugar, baking powder, baking soda, and salt.
  5. Heat up your griddle.
  6. Whisk in your melted coconut oil and eggs to the wet ingredients.
  7. Add your lime zest.
  8. Slowly add your flour, sifting 1/3 of the flour into the wet ingredients, gently stirring to combine, then repeating until you have a thick and slightly lumpy batter.
  9. Ladle batter onto a hot, lightly greased griddle or skillet using a 1/3 cup measuring cup.
  10. Repeat for each pancake, cooking until bubbles form on the tops and pop, leaving a few delicious little air pockets behind.
  11. Flip and brown both sides, repeating for each.
  12. Use a hand mixer or a whisk to whip the heavy cream into whipped cream. Mix in a drop of vanilla extract and finish off with some fresh lime zest for a burst of flavor.
  13. Dollop on top of pancakes and finish off with some crushed graham crackers and a folded lime slice as an optional garnish. Enjoy!

Notes

  • Using two eggs yields fluffier pancakes, but one egg also works well.
  • Have two limes ready to supply juice and zest for batter, whipped topping, and garnish.
  • Pure maple syrup pairs well with these pancakes for serving.
  • Count each 5 x 2.25 inch rectangular graham cracker as one for measuring crumbs accurately.
