Ingredients

Servings
  • 1 cabbage finely chopped (about 8 cups, head
  • 1 carrot finely shredded and chopped (about 1/4 cup)
  • ½ cup mayonnaise
  • cup granulated sugar
  • ½ cup buttermilk
  • 2 Tablespoons lemon juice
  • 2 Tablespoons white vinegar
  • ½ teaspoon kosher salt
  • teaspoon black pepper
  • 2 Tablespoons onion minced

Instructions

  1. Chop and shred carrots and cabbage using a food processor, pulsing until they are about the size of rice. Do not OVER pulse. Pour into a large bowl. Set aside.
  2. In a small bowl, whisk together mayonnaise, sugar, buttermilk, lemon juice, vinegar, salt, pepper, and minced onion.
  3. Pour dressing over carrot and cabbage mixture. Cover and refrigerate for about 2 hours before serving.

Notes

  • Serve cold. KFC coleslaw tastes best straight from the fridge!
  • Don’t rush the marinating. Leaving the slaw in the fridge for at least 2 hours helps the flavors fully develop and combine.
  • Storing. Store prepared KFC coleslaw in the fridge and enjoy within 2 days for best freshness.
  • Serve on a bun with root beer pulled pork!
