KFC Potato Wedges (Copycat)
Description
KFC Potato Wedges begin with large russet potatoes sliced into thick wedges. The wedges soak in a milk and egg mixture to add moisture and help the coating adhere. They are then tossed in a well-seasoned flour blend containing seasoned salt, black pepper, paprika, and garlic powder, which provides a flavorful crust.
The wedges are fried twice: an initial fry to cook the potatoes through and a second fry at higher heat to crisp the coating and achieve a golden brown finish. Using shortening or canola oil heated to 375°F ensures even frying without greasy texture. The end result is crispy, seasoned wedges that contrast with their soft interior, reminiscent of KFC’s distinctive chip style.
This recipe makes a great side or snack that pairs well with dipping sauces or as part of a casual meal.
