Kimchi Soup with Malony Glass Noodles

Kimchi Soup with Malony Glass Noodles features ground pork, kimchi, and tender glass noodles in a spicy, savory broth. The soup is flavored with garlic, sake, sesame oil, and chicken stock, then thickened with a slow drizzle of egg. Toasted sesame seeds and green onion garnish add texture and freshness. It’s a comforting soup showcasing bold, fermented flavors and slippery noodles.

Description

This Korean-inspired Kimchi Soup begins by sautéing ground pork with garlic and seasoning it with sake and toasted sesame oil before adding chopped kimchi. The addition of chicken stock and water provides a flavorful, spicy broth seasoned to taste with salt and freshly ground black pepper. Malony glass noodles, which soften while simmering in the soup, add a chewy contrast, and the slow drizzle of beaten eggs creates gentle ribbons that add body and subtle richness. Finished with toasted white sesame seeds and sliced green onions, this nourishing soup balances the deep, tangy spice of kimchi with umami-rich pork and the comforting texture of glass noodles. It cooks quickly and is ideal for cooler days or any time a hearty soup is desired.
