King Ranch Chicken Dip Recipe
Description
This chicken dip starts by combining cooked, shredded chicken with a mixture of sour cream, tomatillo salsa verde, chopped green chiles, ranch dressing mix, cumin, and shredded Mexican blend cheese. After mixing, the dip is poured into a baking dish, topped with additional cheese, and baked until the edges turn golden and bubbly, creating a creamy and flavorful dish.
The dip pairs well with tortilla chips or fresh vegetables for dipping, accommodating different dietary preferences. It can be prepared ahead of time, refrigerated, and then baked before serving.
Leftovers keep well for several days in the refrigerator when stored properly.
Ingredients
- 2 1/2 cups chicken use up leftovers, cooked shredded
- 2 1/2 cups Mexican blend cheese divided, shredded
- 2 cups sour cream
- 16 ounce Tomatillo Salsa Verde
- 4 ounce green chiles chopped
- 1 packet Ranch dressing mix dip mix
- 1 teaspoon cumin ground
- scallion chopped, or cilantro, for garnish
Instructions
- Preheat the oven to 350 degrees F. Set out a 2 quart baking dish and a large mixing bowl.
- Measure and dump all the ingredients into the bowl, reserving 1/2 cup cheese for later. Mix until smooth.
- Pour the mixture into the baking dish. Sprinkle the remaining cheese over the top.
- Bake for 20-25 minutes, until golden and bubbly around the edges. Sprinkle the top with chopped scallions or cilantro and serve with tortilla chips, or fresh chopped vegetables for a low carb option!
Notes
- This dip can be made low carb by serving with fresh chopped vegetables instead of tortilla chips.
- You may prepare the dip several days in advance; just refrigerate and bake before serving.
- Store leftovers in an airtight container in the fridge for up to 3-4 days.
