Kisir(Turkish Bulgur Salad)

Kisir is a Turkish bulgur salad made by soaking fine bulgur in hot water until soft, then mixing with diced tomatoes, onion, lettuce, and herbs. A sautéed blend of onion, tomato paste, red pepper flakes, and cumin adds rich flavor. The salad is dressed with pomegranate molasses, lemon juice, salt, and pepper, resulting in a refreshing, slightly tangy, and spiced dish served cold as a light side or appetizer.

Description

Kisir employs fine bulgur soaked in hot water to create a tender base. The soaked bulgur is combined with fresh diced tomatoes, finely chopped onion, parsley, spring onions, and chopped lettuce for texture and freshness. The warm flavor component comes from sautéed onion mixed with tomato paste, red pepper flakes, and cumin, which infuses the salad with aromatic spiced notes.

The dressing of pomegranate molasses and lemon juice balances the earthy bulgur with tangy sweetness and citrus brightness. Salt and black pepper refine the seasoning, then everything is mixed thoroughly so the flavors are evenly absorbed.

This salad is ideally served chilled, making it a light and flavorful accompaniment or a refreshing vegetarian option for warm weather meals. The combination of cooked bulgur and fresh vegetables creates a pleasant mix of soft and crunchy textures.

  • 1 tomato small
  • 3 lettuce leaves
  • 4 parsley sprigs
  • 2 spring onion sprigs
  • ½ onion small
  • ½ cup olive oil

  • 2 tbsp pomegranate molasses
  • lemon juice of ½ lemon
  • salt to taste
  • black pepper to taste

Instructions

How to make Kisir(Turkish Bulgur Salad)

  1. Put the fine bulgur into a deep and wide bowl, pour hot water over it, and mix. Cover and set aside until the bulgur absorbs the water.
  2. Finely dice the tomatoes and onion. Set aside.
  3. Finely chop the parsley and spring onions, and coarsely chop the lettuce. Set aside.
  4. Heat the olive oil in a skillet, add the diced onion and sauté until translucent.
  5. Add the tomato paste, red pepper flakes, and cumin to the sautéed onion, and continue sautéing for a few more minutes. Set it aside and let it cool.
  6. Add the finely chopped parsley, spring onions, onion, and tomato paste mixture to the bulgur, which will now have absorbed the water and be swollen.
  7. Then pour the pomegranate molasses and lemon juice into the bowl and season with salt and pepper. Mix for about 5-6 minutes until the flavor of all the ingredients is taken up by the bulgur.
  8. Finally, add the tomatoes and lettuce, mix, and serve cold.
