This is my go-to recipe for healthy chilled knorr spinach dip with EXTRA veggies! It's perfect for sneaking in healthy extras such as cucumber, zucchini, carrots and more!

Ingredients
- ⅓-½ English cucumber grated
- ½ large zucchini squash grated
- 9 oz frozen chopped spinach
- ¼ cup grated carrot
- ¼ cup chopped green onion
- 1 packet Knorr dried vegetable recipe mix
- 1 cup plain greek yogurt (sour cream works too!)
- 1 cup quality mayo (or a second cup of yogurt)
Instructions
- Thaw frozen spinach.
- Once room temperature strain, squeeze and pat our any and all water from the spinach. I usually wring mine out in a stack of paper towels.
- Use a box/cheese grater to grate your veggies.
- Combine all ingredients and chill for 2 hours to lock in the flavor! Dip may be made the night before for easy advance-prep.
- The premixed packets have a blend of dried veggies that I can't seem to find anywhere else, so hunt down a good one and get your dip on! I exclusively use Knorr because it's gluten-free and tastes phenomenal
- Serve with sliced cucumber, zucchini rounds, baby carrots, celery sticks, and veggie chips for dipping.
Notes
- Recipe yields 4 cups of veggie dip!
- I set the serving size at 2 TBSP per serving, but feel free to nosh on extra! I usually swipe 1/4-1/2 cup for a mid-day snack.
