  • 1 ounce frozen chopped spinach thawed and squeezed dry, see Note 1
  • 1 ounce sour cream I recommend full fat, see Note 2
  • 1 cup mayonnaise I like avocado mayo, see Note 3
  • 1 package Knorr® Vegetable Recipe Mix
  • 1 ounce water chestnuts drained and chopped (optional, see Note 4)
  • 3 green onions chopped

Instructions

  1. In a medium-sized bowl, combine all ingredients and mix well.
  2. Chill the dip in the refrigerator for at least 2 hours to enhance flavor and texture.
  3. Serve with your favorite dippers. This classic spinach dip is especially delicious in a bread bowl, with the torn bread pieces, crackers, or fresh veggies for dipping.

Notes

  • The original Knorr recipe calls for cooking the frozen spinach before use. However, most frozen spinach is already cooked and cooled prior to freezing, so there’s no need to cook it again—just thaw and squeeze out the excess liquid.
  • Use 1 pound of fresh baby spinach instead of frozen. Steam or sauté it with 1–2 teaspoons of olive oil until wilted, then cool completely and squeeze out excess liquid with a clean kitchen towel.
  • If using canned spinach, drain it well and squeeze out excess moisture with paper towels. Choose a quality brand, like organic canned spinach.
