Knorr Spinach Dip with EXTRA Veggies

This is my go-to recipe for healthy chilled knorr spinach dip with EXTRA veggies! It's perfect for sneaking in healthy extras such as cucumber, zucchini, carrots and more!

Ingredients

  • ⅓-½ English cucumber grated
  • ½ zucchini grated, large
  • 9 oz spinach frozen, chopped
  • ¼ cup carrot grated
  • ¼ cup green onion chopped
  • 1 Knorr dried vegetable recipe mix packet
  • 1 cup yogurt sour cream works too!, plain, Greek
  • 1 cup mayonnaise or a second cup of yogurt, quality

Instructions

  1. Thaw frozen spinach.
  2. Once room temperature strain, squeeze and pat our any and all water from the spinach. I usually wring mine out in a stack of paper towels.
  3. Use a box/cheese grater to grate your veggies.
  4. Combine all ingredients and chill for 2 hours to lock in the flavor! Dip may be made the night before for easy advance-prep.
  5. The premixed packets have a blend of dried veggies that I can't seem to find anywhere else, so hunt down a good one and get your dip on! I exclusively use Knorr because it's gluten-free and tastes phenomenal
  6. Serve with sliced cucumber, zucchini rounds, baby carrots, celery sticks, and veggie chips for dipping.

Notes

  • Recipe yields 4 cups of veggie dip!
  • I set the serving size at 2 TBSP per serving, but feel free to nosh on extra! I usually swipe 1/4-1/2 cup for a mid-day snack.
