Ingredients
- 1 kohlrabi peeled and cut into matchsticks, green or purple
- 1 cup red cabbage shredded
- 2 carrot
- 1 apple
- 3 tablespoons mixed seeds (pumpkin, sesame, poppy etc...
- 1 scallion chopped, aka spring onion
For the coleslaw dressing
- ½ cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- ¼ teaspoon salt
- ¼ teaspoon black pepper ground
- 1 teaspoon sugar (optional for a sweeter coleslaw)
Instructions
- Peel the kohlrabi and cut it into matchsticks.
- Finely shred the cabbage.
- Peel and shred the carrots.
- Core the apple and cut into matchsticks.
- Add all the vegetables to a bowl and toss with the seeds.
- Stir all dressing ingredients together.
- Add half the dressing to the slaw and gently toss, and add more if desired.
Notes
- Peel kohlrabi and cut into matchsticks or grate for a finer texture depending on preference.
- Select firm kohlrabi with bright, glossy skin free of brown spots for best quality.
