  • 1 kohlrabi peeled and cut into matchsticks, green or purple
  • 1 cup red cabbage shredded
  • 2 carrot
  • 1 apple
  • 3 tablespoons mixed seeds (pumpkin, sesame, poppy etc...
  • 1 scallion chopped, aka spring onion

For the coleslaw dressing

  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 1 teaspoon sugar (optional for a sweeter coleslaw)

Instructions

  1. Peel the kohlrabi and cut it into matchsticks.
  2. Finely shred the cabbage.
  3. Peel and shred the carrots.
  4. Core the apple and cut into matchsticks.
  5. Add all the vegetables to a bowl and toss with the seeds.
  6. Stir all dressing ingredients together.
  7. Add half the dressing to the slaw and gently toss, and add more if desired.

Notes

  • Peel kohlrabi and cut into matchsticks or grate for a finer texture depending on preference.
  • Select firm kohlrabi with bright, glossy skin free of brown spots for best quality.
