  • 1 tablespoon apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon whole grain mustard
  • 1/2 teaspoon salt fine sea salt
  • 1 apple cored and cut into matchsticks, large
  • 1 kohlrabi peeled and cut into matchsticks, medium
  • 1/4 cup red onion thinly sliced
  • 1/4 cup hazelnut toasted, chopped
  • 1/4 cup parsley more for garnish, finely chopped
  • black pepper freshly ground

Instructions

  1. In the bottom of a large bowl, whisk together the oil, vinegar, honey, mustard, and salt.
  2. Add the apple, kohlrabi, onion, hazelnuts, and parsley, and toss to coat.
  3. Season to taste with salt and pepper, garnish with additional parsley, and serve.
