Kolaczki Recipe (Polish Cookies)

Kolaczki are tender Polish cookies made with a dough of cream cheese, butter, and flour, filled with a dollop of jam such as raspberry or apricot. The dough is chilled, rolled, cut into squares, filled, folded over, and baked until lightly golden. After cooling, the cookies are dusted with powdered sugar, resulting in a delicate, flaky pastry with a sweet, fruity center.

Description

The Kolaczki Recipe (Polish Cookies) features a cream cheese and butter-based dough that combines softness with a slight richness. The dough is rolled out and cut into squares, each filled with jam to add a sweet and tangy contrast. Folding the dough around the jam seals in the filling during baking, creating small, shaped pastries.

Baked at 350°F for about 15 minutes, the cookies achieve a delicate browning without hardening, preserving a tender and flaky texture. The final dusting of powdered sugar adds a subtle sweetness and a classic look to these cookies.

Kolaczki cookies can be made with various jam flavors, allowing flexibility depending on preference or seasonal availability. They are often enjoyed with tea or coffee and make a pleasant treat for gatherings or holidays.

Ingredients

Servings
  • 8 oz cream cheese softened at room temperature
  • 1 1/2 cups butter softened at room temperature, unsalted
  • 3 cups flour
  • 2 cups jam
  • 1/4 cup powdered sugar for dusting

Instructions

  1. Gather all your ingredients. While you can use any jam you like, raspberry and apricot work particularly well.
  2. Using a stand mixer or a hand mixer, beat the softened butter, flour and cream cheese until it turns fluffy.
  3. On a well-floured surface, roll the dough into a big ball, wrap it in plastic wrap, and let it rest in the fridge for at least an hour.
  4. On a well-floured surface, roll the dough out into a thin, flat piece. Cut the piece into even-sized squares. Place a dollop of jam in the center of each square. Fold the sides of the squares in, pinching the corners together to secure the jam inside.
  5. Bake the cookies at 350°F for 15 minutes. Once the cookies completely cool, dust them with powdered sugar. Enjoy!
