Kolak Pisang (Banana Kolak)

Kolak is an Indonesian dessert made with palm sugar, coconut milk and pandanus leaf. When banana is added, it is called kolak pisang.

Ingredients

  • 2 plantains (ripe)
  • 4 cups coconut milk
  • 6 oz. palm sugar , cut in small pieces
  • 1 sweet potato (optional)
  • 6 oz. palm fruit (optional)
  • 4 Pandan leaves

Instructions

  1. Boil the palm fruit in water for about 15 minutes or until it is soft.
  2. Optional: Peel, and dice the sweet potatoes in 1-inch (2,5cm) cubes. Boil for about 10 minutes or until tender.
  3. Strain the fruits in a colander and pour some cold water to stop the cooking.
  4. In the same pot, bring the coconut milk to a boil and stir.
  5. Add the palm fruits and the palm sugar. Keep stirring until the sugar is dissolved.
  6. Add 4 tied pandan leaves. Stir well.
  7. Cut the plantains into ½-inch (2,5cm) segments and add into the pan with the sweet potatoes (optional). Stir well.
  8. Return to a boil, then turn off the heat and serve it into individual bowl.
