Ingredients

  • 1 pound lean ground beef
  • 4 cloves garlic minced
  • 1 1/2 teaspoons fresh ginger minced
  • 1/4 cup green onions sliced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 tablespoons brown sugar
  • 1/4 teaspoon crushed red pepper flakes
  • cooked white or brown rice for serving
  • 1 small cucumber sliced
  • 1/2 cup carrots shredded
  • 1 tablespoon sesame seeds

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess grease.
  2. Stir in the garlic, ginger, and half of the green onions and cook for 1 minute.
  3. In a small bowl, combine soy sauce, sesame oil, brown sugar, and red pepper flakes. Pour over the beef and simmer for 2-3 minutes.
  4. Serve the beef over cooked rice with shredded carrots and sliced cucumber. Garnish with remaining green onions and sesame seeds.
