Korean Corn Cheese
Description
This recipe for Korean Corn Cheese combines fresh sweet corn kernels with mayonnaise, shredded mozzarella cheese, sugar, and thinly sliced green onions. The mixture is stirred together and poured into a lightly greased baking dish. Baking at 400°F melts the cheese and heats the corn while creating a creamy texture. A brief broil finishes with a browned, bubbly top that adds appealing color and slight crispness.
The small amount of sugar intensifies the natural sweetness of the corn and balances the richness of mayo and cheese. Green onions offer a mild freshness to the creamy base. Fresh corn is preferred but canned or thawed frozen corn can substitute if drained properly; omit sugar when using canned corn due to brine sweetness.
This dish is often served hot and immediately after broiling as a rich, comforting side or snack. Variations include swapping mozzarella with mild melting cheeses like fontina or gouda, or using chives instead of green onions. It can be made ahead and refrigerated or frozen, adding bake time when reheated from frozen.

- Green onions can be replaced with thinly sliced chives for a slightly different flavor.
- You may substitute mozzarella for other mild melting cheeses like fontina or gouda.
