Korean Zucchini Fritters (Hobak Jeon)
Description
This Hobak Jeon recipe transforms Korean baby zucchini into bite-sized fritters. The zucchini is sliced thinly and lightly salted to draw out moisture and enhance flavor. After resting to pickle slightly, each slice is coated in flour, dipped in egg mixed with salt, and pan-fried until both sides are evenly browned and crispy.
The accompanying dipping sauce mixes soy sauce and rice vinegar, adding a savory and acidic contrast. Sesame seeds may be sprinkled on top for aroma and texture. These fritters serve well as banchan (side dishes) alongside a Korean meal, delivering a satisfying combination of fresh vegetable flavor, light pickling, and fried crispness.
Variations can include replacing zucchini with mushrooms or seafood. The fritters are best eaten fresh but keep well refrigerated and can be reheated in a pan with oil for crispness.
Ingredients
- 1 Korean baby zucchini (애호박 Ae-hobak)
- 1 egg large
- 1/3 cup flour (more if you have a big zucchini!)
- 1/2 tsp sea salt Trader Joe's
- 2 Tbsp vegetable oil or olive oil
Dipping Sauce
- 2 Tbsp soy sauce Kikkoman
- 1 Tbsp rice vinegar (regular vinegar is ok too)
- sesame seed roasted
Instructions
- Cut zucchini into 1/4 inch slices and lay them in layers out on a plate.
- Lightly sprinkle the cut zucchini slices with good quality sea salt before you add another layer.
- Leave them for 5-7 minutes so that they become well salted and slightly pickled.
- In the mean time, put some flour onto a plate or a shallow bowl. Also whisk one egg into another shallow bowl and add a pinch of salt to the egg.
- Coat the zucchini slices with flour on both sides and set aside.
- Heat about 2 T of vegetable or olive oil in a large frying pan over medium high heat. Make an assembly line of the flour coated zucchinis -> beaten egg -> pan. Dip each floured zucchini piece into the egg, coat it fully and then put it in the frying pan.
- When both sides are nicely browned Jeons are ready to be taken off the heat.
- Make some dipping sauce by mixing soy sauce and vinegar together in a separate sauce dish.
- Serve the Hobak Jeon and sauce together as banchan in your delicious Korean meal.
Notes
- The sodium content from the dipping sauce depends on how much sauce is used per serving and is not included in nutritional estimates.
- Zucchini can be substituted with mushrooms, eggplant, fish fillets, shrimp, oyster, or calf liver for variety.
