Lamb Lollipops

Lamb Lollipops are frenched lamb chops marinated with garlic, fresh rosemary, thyme, olive oil, salt, and pepper, then seared or grilled to medium or medium-rare. This results in tender, flavorful lamb chops with a caramelized exterior and juicy interior. The marinade infuses herb aromas and mellow garlic notes, while finishing with a squeeze of lemon adds brightness. Lamb lollipops are typically served immediately, making them a straightforward option for a flavorful grilled dish.

Description

This recipe uses racks of lamb cut into individual chops with a thin layer of fat left for flavor. The lamb is seasoned generously with sea or kosher salt and black pepper. A marinade made by combining minced garlic, chopped fresh rosemary, thyme, and olive oil coats the chops, which are refrigerated for at least two hours to allow the flavors to penetrate the meat.

Cooking is done on a hot skillet or grill over medium-high heat, searing the lamb chops on both sides to develop a browned crust while keeping the center tender and juicy. The sear lasts about four to five minutes total for medium to medium-rare doneness. After cooking, a fresh lemon wedge is squeezed over the chops to add acidity that enhances the rich flavor of the lamb.

Lamb lollipops are served immediately for best texture and are appealing for those who appreciate herbaceous, savory grilled lamb with minimal but thoughtful seasoning.

Ingredients

Servings
  • 3 racks lamb frenched and cut into chops and trimmed of all but thin layer of fat
  • sea salt or Kosher salt, coarse and freshly ground
  • black pepper or Kosher salt, coarse and freshly ground
  • 3 cloves garlic minced
  • 1 tablespoon rosemary fresh, chopped
  • 1 tablespoon thyme fresh, chopped
  • ¼ cup olive oil
  • 1 lemon cut into wedges

Instructions

  1. Liberally sprinkle the chops with salt and pepper all over.
  2. In a small bowl, combine the garlic, rosemary,  thyme, and salt.  Add the oil and whisk until combined.
  3. Pour the marinade all over the chops and turn to coat.  Cover with plastic wrap and place in the fridge for at least 2 hours, or overnight.
  4. Heat a large heavy skillet over medium-high heat, or turn your grill on medium-high heat for direct heat grilling.
  5. Sear the chops (in batches if using a hot skillet) until browned on both sides, about a total of 4 to 5 minutes for medium to medium-rare.
  6. Transfer to a platter and squeeze a lemon wedge over the top.  Sprinkle with a little more sea salt, if desired.  Serve at once.
