Ingredients

Flatbread:

  • 200 grams rye flour about 2 cups; alternatives spelt, buckwheat, or all-purpose flour
  • 1 tsp baking powder
  • 200 grams plain Greek yogurt about 3/4 cup

Lamb:

  • 1 lbs ground lamb 454 grams
  • 1 tbsp za'atar spice blend or other Middle Eastern seasoning

Salad:

  • 1/2 cucumber thinly sliced
  • 1/2 pint tomato halved or quartered, small, ripe
  • 1/2 bell pepper large
  • 1/4 red onion thinly sliced
  • 1/4 cup cilantro either one is optional, chopped, fresh leaves
  • 1/4 cup mint either one is optional, chopped, fresh leaves
  • 1 lemon
  • olive oil drizzle of
  • salt to season
  • black pepper to season

Sumac yogurt:

  • 1/2 cup Greek yogurt thick, plain
  • 1 tbsp sumac
