Ingredients
Flatbread:
- 200 grams rye flour about 2 cups; alternatives spelt, buckwheat, or all-purpose flour
- 1 tsp baking powder
- 200 grams plain Greek yogurt about 3/4 cup
Lamb:
- 1 lbs ground lamb 454 grams
- 1 tbsp za'atar spice blend or other Middle Eastern seasoning
Salad:
- 1/2 cucumber thinly sliced
- 1/2 pint tomato halved or quartered, small, ripe
- 1/2 bell pepper large
- 1/4 red onion thinly sliced
- 1/4 cup cilantro either one is optional, chopped, fresh leaves
- 1/4 cup mint either one is optional, chopped, fresh leaves
- 1 lemon
- olive oil drizzle of
- salt to season
- black pepper to season

- 1/2 cup Greek yogurt thick, plain
- 1 tbsp sumac
