Description

Lasagna preparation begins by browning lean ground beef with minced onion and garlic, then simmering it with tomato sauce and dried herbs for 30 minutes to develop a rich meat sauce. Meanwhile, a cheese mixture is combined from cottage cheese, beaten eggs, Parmesan cheese, salt, and parsley flakes.

In a greased 9x13-inch baking dish, layers are built starting with the meat sauce, then noodles, followed by half the meat sauce, half the cheese mixture, and shredded mozzarella cheese. A second layer repeats these steps without mozzarella on top. The dish bakes at 350°F for 45 minutes before topping with remaining mozzarella and baking an additional 10 minutes until cheese melts and browns slightly. Resting for 10-15 minutes before serving allows it to firm up.

This lasagna serves as a substantial main course, suitable for family meals. Leftovers store well in airtight containers refrigerated up to five days or can be frozen whole or in portions. Freezing is possible both before and after baking, with thawing overnight in the refrigerator recommended before reheating.   • 2 pounds ground beef lean
  • 1 yellow onion minced
  • 2 cloves garlic minced
  • 3 Tablespoons dried parsley flakes divided
  • ½ teaspoon garlic salt
  • ½ teaspoon oregano
  • 4 cans tomato sauce 8 oz, each
  • 6 lasagna noodles prepared
  • 22 ounces cottage cheese
  • 2 egg beaten
  • 1 teaspoon salt
  • ½ cup Parmesan Cheese shredded
  • 1 pound mozzarella cheese shredded

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 9x13 inch baking dish and set aside.
  2. In a large skillet brown the hamburger of over medium heat. Drain off any excess grease.
  3. Add the onion, garlic, 1 Tbsp parsley flakes, garlic salt, oregano, tomato sauce to the skillet and simmer 30 minutes.
  4. Meanwhile in a large bowl combine cottage cheese, eggs, salt, 2 Tbsp parsley flakes and Parmesan cheese.
  5. When the meat mixture is done simmering spread ½ c. of hamburger mixture on the bottom of prepared pan. Place three prepared lasagna noodles side by side on top of meat mixture so they don't overlap. Top with half of meat mixture, half of cottage cheese mixture then half of Mozzarella cheese. Repeat layer except leave off the Mozzarella cheese.
  6. Bake for 45 minutes in the preheated oven at 350 degrees Fahrenheit.
  7. Remove from oven and top with remaining Mozzarella cheese.
  8. Bake 10 more minutes or until cheese is melted.
  9. Remove from oven and let stand for 10-15 minutes before serving.

Notes

  • Store leftover lasagna in airtight containers for up to 5 days in the refrigerator after it has cooled fully.
  • Freeze unbaked or baked lasagna tightly wrapped for up to three months; thaw overnight in the fridge before baking or reheating.
  • Individual portions reheat well in the microwave, stirring halfway through, or bake larger portions covered with foil in a 350°F oven until heated through.
