Lasagna Roll Ups

Lasagna Roll Ups are sheets of al dente lasagna noodles filled with a creamy mixture of ricotta, mozzarella, Parmesan cheese, egg, spinach, and seasoning, rolled into cylindrical shapes. These individual servings offer a convenient and visually appealing twist on traditional layered lasagna, combining tender pasta with a cheesy spinach filling, baked to meld flavors and provide a satisfying meal.

Description

This recipe uses standard lasagna noodles boiled until just tender to maintain enough firmness for rolling without breaking. The filling consists of ricotta cheese, mozzarella, Parmesan, egg, thawed and drained spinach, and simple seasoning with salt and freshly cracked black pepper. The spinach is well-drained to prevent watery filling and is mixed thoroughly with the cheeses and egg to bind the filling.

The filling is spread evenly over the cooked noodles, which are then rolled up tightly into individual servings placed in a casserole dish. The rolls bake at 400°F, allowing the cheeses to cook through, bind, and melt while the noodles hold shape and soften further. This method creates neat portions that are easy to serve and eat, making it suitable for casual dinners or meal prep.

Adding pasta sauce (not detailed in the method here) usually complements the dish, providing moisture and flavor. These roll ups showcase the creamy texture of ricotta and melted mozzarella alongside the tender spinach, contrasted by the tender pasta exterior.

Ingredients

Servings
  • 12 oz. lasagna noodles $2.19
  • 15 oz. ricotta cheese $3.39, whole milk
  • 2 cups mozzarella cheese $2.33, shredded, divided
  • 1/4 cup Parmesan Cheese $0.38, grated
  • 1 large egg $0.09
  • 1/4 tsp salt $0.02
  • 1/4 tsp black pepper $0.02, freshly cracked
  • 10 oz. spinach $1.20, frozen, thawed
  • 1 oz. jar pasta sauce $1.99

Instructions

  1. Preheat the oven to 400ºF. Bring a large pot of water to a boil over high heat. Once boiling, add 1 tsp salt to season the water, then add the lasagna noodles. Boil the noodles just until al dente (they become too delicate to roll if they are too soft). Drain the noodles in a colander.
  2. While the noodles are boiling, drain the thawed spinach, squeezing out as much of the excess water as possible. Add the spinach to a bowl with the ricotta, 1 cup of the mozzarella, Parmesan, egg, salt, and pepper. Stir until everything is evenly combined.
  3. Once the lasagna noodles have cooled enough to touch with your hands, lay a few noodles out onto a clean surface. Spread about ¼ cup of the spinach and cheese filling onto each noodle, spreading it from edge to edge. It's okay if the filling is thin or doesn't create a solid layer. Roll the noodles up, then place in a large casserole dish. Repeat with the remaining noodles until you've used all of the filling. You should get about 16 roll ups and you may have a few noodles left over (those will be back up in case any tear).
  4. Once all of the noodles are filled, rolled, and placed in the casserole dish, pour the jar of pasta sauce over top. Top the lasagna roll ups with the remaining 1 cup of mozzarella cheese.
  5. Cover the casserole dish with foil and bake the lasagna roll ups for 30 minutes in the preheated 400ºF oven. Serve hot and enjoy!
