Description

The recipe starts by browning seasoned ground beef with onion and garlic, then mixing it with pasta sauce to create a savory filling. Separately, cooked lasagna noodles are spread with a mixture of ricotta (or cottage cheese), defrosted spinach, mozzarella, parmesan, and egg to bind. The noodles are rolled jelly-roll style, enclosing the cheese filling.

The roll-ups are placed in a baking dish layered with meat sauce, covered with foil for even cooking, and baked until the flavors meld and the cheeses soften. Then, the foil is removed and additional cheese is sprinkled on top and baked again to create a melted, golden cheese crust. This method produces tender noodles with creamy melted cheese and seasoned meat inside.

These roll-ups are an easier to serve alternative to classic layered lasagna, with convenient individual portions that retain rich tomato and cheese flavor. They can be served with a side salad or garlic bread for a complete meal.

  • 1 package spinach defrosted and squeezed dry, frozen, chopped
  • 2 cups mozzarella cheese shredded
  • 1 ½ cups ricotta cheese or cottage cheese
  • ¾ cup Parmesan Cheese divided, shredded
  • 1 egg
  • 9 lasagna noodles cooked and drained
  • 1 pound ground beef lean
  • 1 onion chopped
  • 1 clove garlic minced
  • 2 cups pasta sauce

Instructions

  1. Preheat oven to 350°F.
  2. Brown ground beef, onion and garlic until no pink remains. Drain and stir in pasta sauce. Cook and drain lasagna noodles according to package directions.
  3. In a small bowl, combine egg, spinach, cottage cheese, ½ cup parmesan cheese, and 1 cup mozzarella cheese.
  4. Lay out cooked lasagna noodles and divide ricotta cheese mixture over noodles. Roll jelly roll style.
  5. Add half of the meat sauce in a 9x13 dish. Place roll ups in dish and top with remaining sauce. Cover with foil and bake 30 minutes.
  6. Remove foil and top with remaining cheeses. Bake an additional 10 minutes or until cheese is melted.
