  • 14 ounces crushed tomatoes tomato sauce, or marinara sauce
  • 28 ounces diced tomatoes with juices, canned
  • 4 cups beef broth reduced sodium
  • 1 green bell pepper diced
  • 1 ½ teaspoons basil dried
  • ½ teaspoon Italian seasoning
  • ½ teaspoon seasoned salt
  • ½ teaspoon black pepper
  • 8 lasagna noodles broken into 1-inch pieces
  • 1 ½ cups spinach optional, chopped, fresh

Instructions

  1. Heat the pot over medium-high heat and add the sausage, onion, and garlic. Break it up with a spoon, cooking until no pink remains. Drain any fat.
  2. Add the crushed tomatoes, diced tomatoes (with juices), beef broth, green pepper, seasonings, and 1 cup of water.
  3. Bring to a boil, reduce the heat to medium low, and simmer covered for 15 minutes.
  4. Add the lasagna pieces to the simmering soup and simmer covered for an additional 15 minutes or until the pasta is tender.
  5. Remove from heat, stir in spinach, and let the soup rest for 5 minutes. Season with additional salt and pepper to taste.
  6. Spoon into bowls and top as desired.
