Latte macchiato is a traditional and delicious coffee-based hot drink from Italy that’s made from espresso, hot milk, and milk froth.

Ingredients
- ¾ cup whole milk
- 1 shot Robusta espresso , sweetened to taste

Instructions
- Make the latte macchiato directly in a hi ball-type glass.
- Whisk the milk in a non-stick saucepan over medium heat to obtain a foam on the surface (or use the steam nozzle of an espresso machine).
- Pour the hot milk into the heat-resistant glass, keeping back the froth using a spatula.
- Add the milk froth to the top of the hot milk.
- The milk must be cooler than the coffee, so let it sit in the glass for about 2 minutes to allow a better separation between the two.
- Finally, very slowly pour a strong espresso over the milk foam.
- Since whole milk has a higher density than espresso, the coffee will sit above the milk but below the foam.
- To serve, garnish the milk foam with chocolate flakes, liquid caramel, cocoa powder, or cinnamon.
Notes
- An authentic latte can only be considered as such if it has three layers: milk, espresso and foam.
- It is essential that the coffee is hotter than the milk. The espresso should be poured very slowly into the glass so that it can visibly settle between the milk and the foam.
- Milk and coffee do not mix because, compared to milk, espresso has a lower density, and being hotter it expands more.
- Foam, on the other hand, is mainly composed of air, and therefore has a lower density which makes it possible to form a crown on top.
