Lavender Lemonade

Lavender Lemonade is a refreshing beverage combining lemon juice and simple syrup infused with culinary-grade lavender flowers. The floral notes from either fresh or dried lavender create a delicate aromatic touch to the tart lemonade. Straining out lavender ensures a smooth drink, served chilled with ice and garnished with lemon or lavender sprigs for a subtle herbal flavor.

Description

This Lavender Lemonade recipe balances freshly squeezed lemon juice sweetness from simple syrup or honey with the gentle aroma of culinary-grade lavender flowers. When using fresh lavender, flowers are crushed to release flavor then combined with lemon and syrup before straining. Dried lavender is steeped in boiling water, cooled, then mixed with lemon juice and sweetener.

The preparation yields a fragrant, lightly floral lemonade served over ice and garnished with fresh lavender sprigs or lemon slices. The herbal lavender flavor complements the bright citrus, resulting in a soothing and refreshing drink suitable for warm weather or afternoon refreshment.

The recipe makes about two servings, and ingredients can be scaled up. Using honey with dried lavender requires dissolving it into the hot infusion before cooling.

Ingredients

Servings
  • 2 teaspoons lavender flowers or 4 teaspoons fresh unsprayed lavender flowers, quality culinary grade
  • 1/3 cup lemon juice freshly squeezed
  • 1/2 cup simple syrup alternatively use one tablespoon honey if using dried lavender/boiling water, see instructions below
  • 12 ounces water cold
  • ice cubes

Instructions

  1. If using fresh lavender: Place the lavender flowers in a glass and use something like a cocktail muddler or mortar and pestle to crush the lavender. Stir in the lemon juice and simple syrup.
  2. Strain out and discard the lavender flowers. Add ice and water to the liquid and serve with a sprig of fresh lavender and/or slice of lemon.
  3. If using dried lavender: Boil the water. Place the dried lavender flowers in a mug and pour the boiling water over them. Let it steep for a few minutes, strain out and discard the lavender flowers and let the liquid cool completely. If using honey, stir it in before the liquid has cooled. Otherwise, once the liquid has cooled, stir in the lemon juice and simple syrup, add the ice and serve with a sprig of fresh lavender and/or slice of lemon. This yields about two servings. For more servings simply double/quadruple, etc the ingredients.
