Layered Strawberry Chia Pudding
Description
The Layered Strawberry Chia Pudding starts with chia seeds soaked overnight in almond milk sweetened with honey. The chia seeds absorb the liquid to form a smooth, gelatinous pudding base. Fresh strawberries are mashed and mixed with half of the chia pudding, creating a distinct strawberry layer. This strawberry layer is then alternated with plain chia pudding in individual servings. The pudding is topped with mixed berries and sliced almonds, adding texture and freshness. The almond milk base and natural honey provide a mild sweetness and creaminess, while the chia seeds give the pudding its characteristic thick consistency. This layered preparation highlights the contrast between the plain pudding and fruity layer.
The pudding can be refrigerated and served cold, making it convenient for a light breakfast or snack. The natural ingredients and simple preparation allow for substitution of other fruits or milk choices depending on availability or preference.
Leftover pudding can be stored in an airtight container in the fridge for up to a week, and freezing in single portions is also possible. Allow frozen pudding to thaw in the refrigerator for several hours before serving for best texture retention.
Ingredients
- ½ cup chia seeds
- 2 cups almond milk or milk of choice
- 2 teaspoons honey
- 1 cup strawberries
- mixed berries for topping
- almonds for topping, sliced
Instructions
- Place chia seeds, milk and sweetener in a large bowl or jar and stir to combine. Allow the chia seeds to settle for a few minutes and then stir again until there are no clumps, and all the chia seeds are floating and gel-like.
- Cover the container and refrigerate overnight or for at least one hour.
- Use a small food processor or blender or fork to mash the strawberries. Add half the chia pudding mixture to the strawberries and stir to combine.
- Divide the strawberry chia pudding into four bowls or jars. Add the regular chia pudding on top, and garnish with more berries and nuts, if desired.
Notes
- Store leftover chia pudding in a sealed container for up to 7 days in the refrigerator.
- For freezing, portion the pudding individually and thaw in the fridge for 4-6 hours before serving.
- Chia seeds are commonly found near hot cereals in grocery stores.
- Almond milk can be replaced with any preferred plant-based or dairy milk.
- Strawberries can be substituted by pureeing other fresh fruits to vary flavors.
