Leftover BBQ Turkey Quesadillas
Description
This recipe combines shredded turkey tossed with homemade barbecue sauce and chopped leftover vegetables. The mixture is spread over half of soft flour tortillas, topped with grated cheddar cheese, and folded before cooking in a dry pan. The quesadillas are cooked gently on each side until the exterior is lightly crisp and the cheese inside melts to bind the filling.
The dish is flexible in ingredients – barbecue sauce can be swapped with salsa or cranberry sauce, and various cheeses or green vegetables like shredded spinach can be added. If turkey is not available, shredded chicken can be used instead. The quesadillas offer a convenient way to repurpose leftovers into a warm, satisfying meal or snack.

Ingredients
- 2 flour tortillas soft
- 100 g turkey shredded
- 4 tablespoon barbecue sauce homemade
- 40 g cheddar cheese grated
- 150 g vegetables chopped, leftover
Instructions
- Mix 100 g Shredded turkey and 4 tablespoon Homemade BBQ sauce together.
- Spread on half of each of 2 Soft flour tortillas.
- Top with 150 g Leftover vegetables.
- Sprinkle with 40 g Cheddar cheese.
- Fold them over and then put them in a dry pan.
- Gently cook for 2 minutes each side and carefully flip.
Notes
- Swap barbecue sauce with salsa or cranberry sauce for flavor variation.
- Use different cheeses leftover from a cheeseboard, not only cheddar.
- Add shredded spinach to increase vegetable content.
- Substitute turkey with shredded leftover chicken if preferred.
