Leftover ham and cheese puff pastry pies
Description
This recipe uses thawed puff pastry rolled out and cut into squares that serve as individual pie shells. The filling combines cubed ham, which can be leftover cooked ham or gammon, with grated cheese to create a rich, savory center. A small spoonful of onion marmalade adds a touch of sweetness and depth to the filling.
Each square is topped with the filling and marmalade, then folded over diagonally and edges sealed by crimping with a fork. The pies are brushed with beaten egg and sprinkled with sesame seeds for a golden, glossy finish. Baking at 180°C (350°F) for 15 to 20 minutes results in flaky, golden-brown pastries with cooked-through filling. Allowing the pies to rest slightly after baking helps the filling firm up a bit for easier handling.
These puff pastry pies can be a practical use for ham leftovers or gammon and provide a portable, savory pastry suitable for snacks, lunches, or casual appetizers.
Ingredients
- 400 g (14oz) puff pastry thawed
- 2-3 cups ham cubed, leftover or gammon
- 2 cups cheese grated
- ½ cup onion marmalade

Instructions
- Preheat the oven to 180°C/350°F.
- Slice the ham into thin slices then cube.

- Roll out the thawed puff pastry into a large rectangle on a floured surface then slice into 6 squares.
- Place a teaspoon of onion marmalade onto the pastry then add a generous handful of filling.
