Leftover Ham and Potato Soup Recipe

This Leftover Ham and Potato Soup blends chopped country ham, new potatoes, and fresh vegetables into a creamy, comforting soup. The butter sautés the aromatics and ham, while flour and chicken broth create a smooth base. Cheddar cheese and sour cream enrich the soup, balancing the savory ham with creamy textures. The optional red pepper flakes add a gentle warmth for depth. It’s a practical way to repurpose leftover ham into a hearty, satisfying meal that pairs well with crusty bread.

Description

The Leftover Ham and Potato Soup Recipe starts with sautéing onion, celery, carrots, and ham in butter to build flavor. Adding garlic and flour creates a light roux that thickens the broth. Unpeeled new potatoes are simmered until tender, contributing body to the soup. The mixture is finished with heavy cream or milk, sharp cheddar cheese, and sour cream, resulting in a rich and creamy texture. Red pepper flakes can be added for subtle heat, complementing the salty depth of the country ham.

This soup works well as a filling lunch or dinner and can be served with additional garnishes like sour cream, cheese, or chopped ham for extra flavor and texture. It captures the savory essence of leftover ham while providing a creamy base with tender vegetables.
