Leftover Ham Casserole
Description
The casserole begins by cooking egg noodles to al dente and setting them aside. A roux is made by melting butter and seasoning with garlic, Italian seasoning, flour, salt, and pepper, then gradually whisking in chicken broth and heavy cream to a thick sauce. Sharp cheddar cheese is melted in, creating a rich, cheesy base.
Chopped leftover ham and steamed broccoli are gently folded into the sauce along with the cooked noodles. The mixture is transferred to a greased baking dish. A topping of melted butter mixed with panko breadcrumbs and grated Parmesan covers the casserole, providing a golden, crunchy crust once baked at 375 degrees Fahrenheit until bubbly and browned.
After resting post-bake, the casserole is ready to serve any time a filling baked pasta dish is desired. It adapts well to substitutions of other cooked meats and different crunchy toppings like crushed crackers.
Leftover portions keep well refrigerated for several days for convenient reheating.
Ingredients
For the Casserole:
- 4 Tablespoons butter
- 2 teaspoons garlic minced
- 1 teaspoon Italian seasoning
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 2 cups heavy cream
- 1 cup cheddar cheese shredded, sharp
- 4 cups egg noodles wide
- 2 cups ham chopped, leftover
- 2 cups broccoli chopped, steamed
For the Topping:
- 2 Tablespoons butter melted
- 1/2 cup panko bread crumbs
- 1/4 cup Parmesan Cheese grated
Instructions
- Cook the egg noodles based on the package instructions to al dente. Rinse with cold water and set aside.
- Preheat the oven to 375 degrees F and spray a 9X13 baking pan with a non-stick cooking spray.
- Melt the butter in a large saucepan over medium high heat. Add the minced garlic. Cook for 1 minute. Then whisk in the flour, salt, pepper and Italian seasoning.
- Once the flour mixture has thickened, slowly whisk in the chicken broth and the heavy cream. Heat and whisk until the mixture thickens.
- Remove the pan from the heat and then whisk in the cheddar cheese until it’s melted.
- Gently stir in the ham, pasta and broccoli. Then pour the mixture into the 9X13 baking pan.
- In a small separate bowl, stir together the topping ingredients.
- Top the casserole with the topping mixture. Then bake for 20-25 minutes until the casserole is bubbly and the top is golden brown.
- Allow the casserole to sit for 10-15 minutes. Then it’s ready to serve and enjoy!
Notes
- Leftover turkey or cooked chicken can replace the ham as preferred.
- Crushed crackers or Ritz crackers may be used instead of panko breadcrumbs for the topping.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
