Leftover Mashed Potato Pancakes

Leftover Mashed Potato Pancakes transform cold mashed potatoes into crispy, golden patties flavored with cheddar cheese and green onions. Bound with egg and flour, these pancakes fry in butter and olive oil to develop a crunchy exterior while maintaining a soft and cheesy interior. They are served with sour cream for added creaminess, making them a comforting and easy dish to repurpose leftovers.

Description

This recipe combines cold mashed potatoes with egg, flour, shredded cheddar cheese, sliced green onions, salt, and pepper to form a batter. The mixture is scooped into spoonfuls and cooked in a skillet with a combination of olive oil and butter to achieve a crispy crust. Pancakes are browned carefully and flipped once to preserve their shape and texture.

The finished potato pancakes are best enjoyed hot, topped with sour cream and additional green onions, providing a creamy counterpoint to the crispy exterior. They make an excellent side dish or snack using leftover mashed potatoes efficiently.

Ingredients

Servings
  • 2 cups potatoes mashed, cold
  • 1 egg
  • ¼ cup flour
  • ½ cup cheddar cheese shredded
  • 1 to 2 green onions sliced
  • salt to taste
  • black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • sour cream for garnish

Instructions

  1. In a large bowl, mix together the mashed potatoes, egg, flour, cheese, green onion, salt, and pepper.
  2. Place a large skillet over medium-high heat. Add 1 tablespoon olive oil and 1/2 tablespoon butter into the skillet.
  3. Once the butter is melted, add large spoonfuls of the potato mixture to your skillet. Do not overcrowd the pan, you'll work in 2 batches.
  4. Brown the pancakes on each side until they are golden, using a spatula to flip them once. Transfer pancakes to a plate. Add the remaining oil and butter to the skillet and repeat with the remaining potato mixture.
  5. I like to serve these potato pancakes topped with sour cream and a little more green onion.
